Hard Boiling Fresh Farm Eggs

As I have mentioned in previous entries, I am addicted to chickens and ducks! I am even more addicted to their fresh eggs. Oh, that yummy, golden yolk! Keep in mind, when purchasing eggs from the market, there is a good chance they are already one month old…at least! (Yikes!) Commercial egg farmers have 30 days to sell their eggs. The longer the eggs sit, the more the membrane beneath the shell separates from the shell, making peeling easier. This is a positive when making hard-boiled eggs. But, once you have experienced the taste of a delicious farm fresh egg, you will never go back! Trust me!

So, the question is…

Can you hard boil a fresh egg and peel it easily?

The answer…YES!

Step 1: Suppliesimg_5095-1
-farm fresh eggs (duck or chicken)
-medium pot for boiling water
-water
-slotted spoon
-medium bowl
-ice

Step 2: Boil Water Bring the water to a rolling bowl first. Do not add the eggs before you boil the water! This is the KEY! img_5125

Step 3: Add Eggs Lower the eggs into the boiling water, using a slotted spoon. Set the timer for 15 minutes. Boil the eggs for 15 minutes, regardless of size: small, medium or jumbo. While you are waiting, fill a medium bowl with ice cubes and cold water.

Step 4: Drain and ice When the timer goes off, turn off the heat. Individually lift the eggsimg_5126-1 with the slotted spoon and delicately set them a bowl of ice water. Let the eggs cool completely.

Step 5: Refrigerate & Peel
Store the cool/dry eggs in the refrigerator. When you are ready to peel, just crack the egg on a hard surface and peel off the shell. I prefer peeling hard-boiled eggs under cold water. This helps remove any small shell pieces.

Step 6: Eat & Enjoy!

Note: The cream eggs pictured here are from our bantam chickens. They lay adorable little eggs. These eggs are the perfect size for a quick snack, for you can pop the entire little egg in your month! They are also the perfect size for slicing in salads. It is always fun to utilize different size eggs in different ways! Enjoy!

Rise and Shine Breakfast Cookies

This weekend, I felt the pull to create a breakfast cookie, filled with health and wellness!  As much as I love eggs, toast and bacon, there are times I need something fast.  I have never been a fan of cereal, for it doesn’t fill me up for long.  Before I am finished with morning chores in the barn, my tummy is already asking for more!  Plus, I have three teenagers that eat…constantly!  Having healthy choices for them is always my goal.  If teenagers see freshly baked cookies on the counter, they disappear instantly!  They don’t even think to ask what healthy goodness I might have hidden in these morning treats!
