Rise and Shine Breakfast Cookies

This weekend, I felt the pull to create a breakfast cookie, filled with health and wellness!  As much as I love eggs, toast and bacon, there are times I need something fast.  I have never been a fan of cereal, for it doesn’t fill me up for long.  Before I am finished with morning chores in the barn, my tummy is already asking for more!  Plus, I have three teenagers that eat…constantly!  Having healthy choices for them is always my goal.  If teenagers see freshly baked cookies on the counter, they disappear instantly!  They don’t even think to ask what healthy goodness I might have hidden in these morning treats! My 3 Favorite Smoothies

Breakfast in a Cup!

Breakfast has always been difficult for me. Getting up in the morning and chewing food just never worked. But, breakfast is the most important meal of the day. It jump-starts the metabolism and prevents those afternoon energy dips that make me want to curl up with my favorite green blanket and hibernate. Eating breakfast not only protects my family members from potential crankiness, but protects myself from the notorious afternoon salty/sweet attack. For all of these reasons, I was determined to find a breakfast source that I could easily stomach, within the first hour of waking up.
