As I have mentioned in previous entries, I am addicted to chickens and ducks! I am even more addicted to their fresh eggs. Oh, that yummy, golden yolk! Keep in mind, when purchasing eggs from the market, there is a good chance they are already one month old…at least! (Yikes!) Commercial egg farmers have 30 days to sell their eggs. The longer the eggs sit, the more the membrane beneath the shell separates from the shell, making peeling easier. This is a positive when making hard-boiled eggs. But, once you have experienced the taste of a delicious farm fresh egg, you will never go back! Trust me!
So, the question is…
Can you hard boil a fresh egg and peel it easily?
Step 1: Supplies
-farm fresh eggs (duck or chicken)
-medium pot for boiling water
Step 2: Boil Water Bring the water to a rolling bowl first. Do not add the eggs before you boil the water! This is the KEY!
Step 3: Add Eggs Lower the eggs into the boiling water, using a slotted spoon. Set the timer for 15 minutes. Boil the eggs for 15 minutes, regardless of size: small, medium or jumbo. While you are waiting, fill a medium bowl with ice cubes and cold water.
Step 4: Drain and ice When the timer goes off, turn off the heat. Individually lift the eggs with the slotted spoon and delicately set them a bowl of ice water. Let the eggs cool completely.
Step 5: Refrigerate & Peel
Store the cool/dry eggs in the refrigerator. When you are ready to peel, just crack the egg on a hard surface and peel off the shell. I prefer peeling hard-boiled eggs under cold water. This helps remove any small shell pieces.
Step 6: Eat & Enjoy!
