Fruit and Curry Chicken Salad

When I contemplate summer meals, this recipe has been a favorite for years!  I rarely follow a recipe, so if it actually ends up written down on paper, I know it is here to stay for all of eternity!  The Fruit and Curry Chicken Salad is a light, refreshing meal or snack filled with flavor!  And, as long as your chicken is already cooked, you don’t even have to turn on the oven! Now that is a summer bonus!

Because we raise our own clean and healthy meat chickens, the freezer is always filled with pure goodness. Knowing exactly how my food is raised is extremely important to me. Although these birds never have names and are only with us for a very short time, they are loved, well cared for and most of all respected.  They have a beautiful eight weeks of life and one bad day. When I consider most commercial chickens have 8 bad weeks of life and 1 really bad day, everything is put into perspective.   The one bad day equals many healthy days for my family.


We only raise Cornish Rock chickens, for they are specifically raised for meat production. Their natural life span is, on average, about 12 weeks. (Layers don’t even begin laying eggs until 18 weeks of age.)  These birds are raised to eat, grow and poo! All of which they do amazingly well!  They do not scratch like layer chickens or even act like a  “normal” chicken. They are more of a robot, genetically programmed for a specific purpose. For me, it makes that one bad day a little less painful.

Knowing that life is busy, I prefer to cook a large chicken and then use it for a variety of meals throughout the week.  For example, the Curry and Fruit Chicken Salad recipe uses chicken breasts.  I save the dark meat for Chicken Fried Rice, later in the week. Wifey always says, ” Work smarter, not harder!”  And with that said, I believe it is time to share this delicious recipe!

Fruit and Curry Chicken Salad



  • 1 lb chicken breast, cooked and chopped in small chunks
  • 1/2 C  silvered almonds
  • 2 C  pineapple chunks
  • 1 C red grapes
  • 1 C green grapes
  • 1 C non-fat mayo (I love the smart balance brand)
  • 2 tsp curry powder
  • 2 T minced garlic
  • 1 T lime juice
  • 1 1/2 C Mango Chutney
  • 2 tsp freshly grated ginger
  • 1 T parsley


  1. Combine the chicken, almonds and fruit in a large bowl
  2. Combine the mayo, curry, garlic, lime, chutney, ginger and parsley. Mix Well
  3. Toss mixture with chicken, almonds and fruit
  4. Chill  – Serves 4-6
