Fiesta Salsa

In celebration of Cinco de Mayo, I thought I would share my most favorite fresh salsa recipe!  It is amazingly yummy, easy to make and packed full of healthy goodness.  I can’t think of a better go to snack!  This tends to be a staple during the summer, for I have the majority of the ingredients growing fresh, right in the garden.  Just another reason for you to find that small area of land, purchase some seeds and get planting! Remember, if you don’t have the space for a garden, many tomato and pepper varieties grow beautifully in containers!  Happy salsa time!

Jalapenos add nice heat to any recipe!
I love growing and drying shell beans to use throughout the year.  Canned black beans work great in this recipe, too!

Fiesta Salsa Recipe

  • 2 -15 oz cans of black beans – drained
  • 1 – 15 oz can whole corn – drained
  • 1/4 C red onion – diced (white or yellow onions work well, too)
  • 1/4 C cilantro – minced
  • 3 tomatoes – diced
  • 2 T light olive oil (optional)
  • Dash of fresh lime juice
  • 4 T minced garlic
  • 1-2 jalapeno peppers (optional for heat)


You might not be able to control everything in your life, but you can control what you put in your body!

      1. That’s incredible. It takes a lot of courage. My mom owns a coffee farm and it’s harvest time. Delicious coffee is made there. Oh, I’m a teacher. What did you use to teach?

  1. Yummy! I will definitely try your recipe 🙂 My husband (hispanic) and I get a good laugh when it comes to celebrating Cinco de Mayo—a holiday Hispanics don’t celebrate but we Americans sure do!! I did however wish him a Happy Cinco de Mayo this morning!! Have a fun filled day~

  2. Wow that looks yummy. We love Mexican food and adore vegetables. Unfortunately I have a big problem with my garden : somebody eats my strawberries !!! First I thought it might be nice or some other rodents but apparently the responsible are ants. And the ones I saw are Mutant ET ants half an inch in length. So how can I prepare your beautiful smoothies if nature has decided to work against me ? 😂 LOL


      1. I wish I could enjoy gardening just like you! 🙂 I have a very little space for gardening in our current place… I guess planting on the pots will do for now. 🙂
