Guacamole Time!

I have a passion for avocados!  Can you eat too much chocolate? Yes!  Can you eat too many avocados? NEVER!  I love avocados in egg salad.  Avocados make smoothies a creamy delight!  But, my favorite way to consume avocados is in the form of guacamole!  Who doesn’t love avocados surrounded by fresh tomatoes, garlic, onions and a touch of lime?   Yum! 

Avocados have amazing health benefits!  They are high in fiber and potassium. Avocados are known for lowering bad cholesterol and regulating blood sugar levels. They promote healthy bones, strengthen the immune system and nourish the skin, to name just a few health benefits. What are you waiting for…head to the market today!  Are you are unsure on how to tell if an avocado is ripe?

An avocado is ripe if appears dark in color, is soft when light pressure is applied and the end is light in color. You might have to remove the end to check.

I hope this simple guacamole recipe brings much joy to your taste buds! Enjoy!

  • 3 avocados
  • 3 tomatoes
  • 2 medium white or yellow onions
  • 2 Tbsp minced garlic
  • 1 small lime (juice only)
  • salt and pepper to taste


  1. Cube the avocados, then mash with a fork, in a medium bowl.
  2. Petite dice the tomatoes
  3. Mince the onion.
  4. Mince the garlic.
  5. Mix the tomatoes, onions and garlic with the mashed avocado.
  6. Add the juice from 1 lime  *A little lime juice can go a long way
  7. salt and pepper to taste

Note:  Experiment with the amounts of onion and garlic, based on your taste preferences. Cilantro and/or jalapeno can also be fun additions to this recipe!

  1. Avocados are really good for you.Guacamole is one of my favorite things. Have you seen you can now buy avocado oil like the olive oil? We love the avocado oil on asparagus baked in the oven, mixed with vinegar as a salad dressing, we even use it to stir fry with or to marinate steak with seasoning.

  2. I couldn’t agree more!!! I learned to make guacamole by intently watching my mother-in-law make it and pico de gallo at our house one day! I was sure to get it right. It makes me happy when family and friends say-“this reminds me of home” 🙂
